Ingredients

340 gram packet butter cake mix

2 eggs

60 gram butter

2/3 cup buttermilk

2 tablespoon cocoa powder

1 tablespoon just-boiled water

125 gram strawberries (1/2 punnet), washed, hulled, finely chopped

extra halved strawberries, to serve

Method

1.Preheat oven to moderate, 180°C. Line a 12-hole muffin pan with paper patty cases.

2.Prepare cake mix using eggs, butter and buttermilk, following packet instructions; reserve 1/2 cup mixture.

3.Combine cocoa and water in a jug. Add to main mixture with strawberries.

4.Spoon mixture into prepared recesses. Spoon reserved mixture on top; swirl into mixture using a skewer.

5.Bake 25-30 minutes, until cooked when tested with a skewer.

6.Serve muffins topped with halved strawberries.
