Method
1.Heat a non-stick frying pan on high. Spray with oil and cook prosciutto for 1 minute each side. Remove, allow to cool a little and break into pieces.
2.DRESSING: In a small jug, whisk together all the ingredients. Season to taste.
3.In a bowl, combine prosciutto, lettuce, parmesan and egg. Drizzle with dressing to serve.
