Method

1.Sift combined flours and baking powder together into a large bowl; stir in oats. Make a well in centre.
2.In a jug, whisk buttermilk, eggs and syrup together. Gradually add to dry ingredients; whisk until smooth. Set aside 15 minutes.
3.Meanwhile, to make maple apples, in a large frying pan, melt butter on medium. Stir in syrup; bring to a gentle simmer. Add apple slices; cook 4-5 minutes, turning once, until almost tender and lightly caramelised. Cover; keep warm.
4.Spray a large non-stick frying pan with oil.
5.Working in two batches of four, pour 1/3 cup batter into pan. Cook 2-3 minutes each batch, until bubbles appear on surface and underside is golden. Turn; cook a further 1-2 minutes, until golden and cooked through.
6.Serve pancakes topped with apples in syrup. Accompany with low-fat yoghurt or custard.
