Borlotti beans with sausages

This is an easy dish to put together for a midweek meal. Serve it with crusty bread or jacket-baked potatoes and silverbeet.

1.Heat 1 tablespoon oil in a large frying pan over medium heat. Add sausages and brown quickly – don’t worry about cooking them all the way through because they will continue to cook with the beans. Transfer to a plate.
2.Put remaining 2 tablespoons oil in the pan, then add the onion. Cook slowly for about 20 minutes, until golden, stirring often. Add garlic and cook for a further 5 minutes, then mix in tomatoes and ¼ cup water. Bring to a gentle boil, then lower heat and cook gently for 20 minutes, or until pulpy.
3.Add borlotti beans and return sausages to the pan. If the mixture is very thick, thin it down with a little water. Cook gently for 20 minutes. Check seasoning and swirl in parsley. Lift out sausages and cut in half (or leave whole). Serve sausages on the beans, sprinkled with extra parsley.
