Method

1.Preheat oven to moderately slow, 160°C. Lightly grease 4 x 1 1/2-cup ramekins. Place on a baking tray.
2.Heat oil in a medium frying pan on high. Saute bacon and onion 3-4 minutes, until onion is tender. Add tomato; cook 1 minute. Set aside to cool.
3.In a bowl, whisk together bacon mixture, half the eggs, half the cheese and spinach; season to taste. Divide mixture between prepared ramekins.
4.Break remaining eggs, one at a time, into a small bowl. Carefully slide 1 egg into each ramekin. Sprinkle each with an even amount of remaining cheese.
5.Bake 20-25 minutes, until yolk is just set. Serve with toast.
