Ingredients
Method
1.Preheat oven to moderate, 180°C (160° fan-forced). Lightly grease and line an 18x28cm slice pan.
2.In a large bowl, using an electric mixer, beat butter, sugar and vanilla together until pale and creamy.
3.Add eggs one at a time, beating well after each addition, scraping down sides of bowl.
4.Sift flour and spice together, then lightly fold through creamed mixture alternately with combined sour cream and milk, beginning and ending with flour.
5.Spoon mixture into pan, smoothing top. Arrange apples over cake and sprinkle evenly with combined sugar and cinnamon.
6.Bake 35-40 minutes, until cooked when tested. Cool in pan 5 minutes. Cut into squares to serve. Serve with cream, if desired.
Suitable to freeze. TIP: Use a light hand and don’t over-mix when adding flour, as doing so will produce a tough, low-volume cake.
