Method
1.Preheat oven to 200°C (180°C fan-forced). Grease a 12-hole muffin tray.
2.Melt butter in a large frying pan over moderately high heat. Cook and stir onion for 8-10 minutes or until golden. Remove from heat; stir in anchovies, olives and parsley. Cool for 5 minutes.
3.Meanwhile, using an 8.5cm pastry cutter, cut 12 rounds from pastry. Press 1 round into each muffin hole. Spoon onion mixture into pastry cases; top with cheese.
4.Place remaining ingredients in a large jug: whisk to combine. Pour egg mixture into pastry cases. Bake for 20-25 minutes or until just set and golden. Stand quiches in pan for 5 minutes. Serve warm.
Make ahead and freeze. Thaw in fridge overnight. Can be served cold or warmed for 5 minutes in the oven.
