Method

1.Preheat oven to 200°C or 180°C fan. Grease a 6 cup-capacity baking dish.
2.Cook potatoes in a large saucepan of salted boiling water for 6 minutes, until starting to soften. Drain and set aside.
3.Meanwhile, melt margarine in a saucepan on medium-low heat. Add flour and cook, stirring, for 1 min, until mixture bubbles. Gradually whisk in milk. Cook, stirring, for 3-4 mins, until sauce bubbles and thickens. Remove from heat. Stir in tuna and season to taste.
4.Finely slice potatoes. Arrange three-quarters of potato over base of prepared dish. Top with tuna mixture and remaining potato, overlapping slightly. Bake for 20 mins. Top with cheese. Bake for another 10 mins, until golden and bubbling. Season and serve with salad.

You could use skim milk and light cheddar in this recipe, if you like, and still achieve irresistibly creamy results.
