1.Preheat oven to moderate, 180°C. Line 18 holes of 2 x 12-hole patty pans with paper patty cases.
2.In a large bowl, using an electric mixer, beat butter and sugar until creamy.
3.Add eggs one at a time, beating well after each addition. Scrape down sides of bowl. Beat in the vanilla extract.
4.Lightly fold flour into the creamed mixture alternately with the milk, beginning and ending with the flour.
5.Spoon mixture into cases until half full. Top with a rolo then fill with remaining mixture until full.
6.Bake for 15-20 minutes, until cooked when tested. Let cool in pans for 5 minutes, then transfer to a wire rack to cool completely.
7.To make icing; in a small bowl, using an electric mixer, beat butter until creamy. Gradually add icing sugar. Beat in milk and a few drops of food colouring. Spread icing over cakes.
To prevent mixture from overflowing, never fill patty cases more than 2/3 full. You can use a muffin pan to make large cupcakes. You will get about 12.
